Memil guksu, a traditional Korean noodle dish, is celebrated for its light and refreshing taste, often enjoyed during summer. It’s made with buckwheat noodles, offering a nutty flavor and complemented by a chilled broth of soy sauce, vinegar, and mustard, topped with a variety of fresh vegetables.
Ingredients
- buckwheat noodles – 400 g / 14 oz
- soy sauce – 1/2 cup / 120 ml
- vegetable broth – 2 cups / 480 ml
- rice vinegar – 2 tbsp / 30 ml
- Korean mustard – 1 tbsp / 15 g
- cucumber – 1, julienned
- carrot – 1, julienned
- green onions – 2, finely chopped
- sesame seeds – 2 tbsp / 30 g
Instructions
- Cook the buckwheat noodles according to the package instructions. Rinse under cold water and drain well.
- In a bowl, mix soy sauce, vegetable broth, rice vinegar, and Korean mustard until combined.
- Divide the cooked noodles into bowls and pour the cold broth mixture over them.
- Top with julienned cucumber and carrot, and sprinkle finely chopped green onions and sesame seeds over each dish.
- Serve immediately, and enjoy the refreshing taste!
