Ingredients

  • buckwheat noodles – 400 g / 14 oz
  • soy sauce – 1/2 cup / 120 ml
  • vegetable broth – 2 cups / 480 ml
  • rice vinegar – 2 tbsp / 30 ml
  • Korean mustard – 1 tbsp / 15 g
  • cucumber – 1, julienned
  • carrot – 1, julienned
  • green onions – 2, finely chopped
  • sesame seeds – 2 tbsp / 30 g

Instructions

  1. Cook the buckwheat noodles according to the package instructions. Rinse under cold water and drain well.
  2. In a bowl, mix soy sauce, vegetable broth, rice vinegar, and Korean mustard until combined.
  3. Divide the cooked noodles into bowls and pour the cold broth mixture over them.
  4. Top with julienned cucumber and carrot, and sprinkle finely chopped green onions and sesame seeds over each dish.
  5. Serve immediately, and enjoy the refreshing taste!
