Meghli is a beloved Lebanese dessert traditionally prepared during the celebration of a newborn child’s birth. Ingredients

  • water – 4 cups / 960 ml
  • rice flour – 1 cup / 160 g
  • sugar – 1 cup / 200 g
  • caraway powder – 1 1/2 tbsp / 10 g
  • cinnamon – 1 1/2 tbsp / 12 g
  • anise powder – 1/2 tsp / 2 g
  • crushed walnuts – 1/2 cup / 50 g
  • crushed almonds – 1/2 cup / 60 g
  • crushed pistachios – 1/2 cup / 60 g
  • shredded coconut – 1/4 cup / 25 g

Instructions

  1. In a large pot, combine water, rice flour, sugar, caraway powder, cinnamon, and anise powder. Whisk together until well mixed.
  2. Place the pot over medium heat and continuously whisk until the mixture begins to thicken, about 10-12 minutes.
  3. Reduce heat to low and continue to stir until the mixture reaches a pudding-like consistency, which should take an additional 15 minutes.
  4. Pour the pudding into serving dishes and allow it to cool at room temperature.
  5. Refrigerate the Meghli for at least 2 hours to set completely.
  6. Before serving, garnish with walnuts, almonds, pistachios, and coconut.

Substitutions

  • rice flour -> cornstarch (1 cup / 125 g)
  • sugar -> honey (1/2 cup / 120 ml)
  • crushed walnuts -> crushed pecans
  • crushed almonds -> hazelnuts
