Mee Rebus is a signature Malaysian noodle dish renowned for its rich and savory gravy. The bold flavors of the gravy are achieved by combining sweet potatoes, shrimp paste, coconut milk, and an array of spices, poured over yellow noodles and garnished with bean sprouts, fried tofu, boiled eggs, and lime. It’s the perfect fusion of spicy, sweet, and tangy, offering a comforting taste of Malaysian culinary heritage.

Ingredients

  • yellow noodles – 500 g
  • sweet potatoes – 300 g
  • peanut oil – 2 tbsp
  • garlic, minced – 4 cloves
  • shallots, sliced – 5
  • shrimp paste – 2 tbsp
  • coconut milk – 1 cup / 240 ml
  • chicken broth – 2 cups / 480 ml
  • bean sprouts – 200 g
  • fried tofu, cubed – 200 g
  • hard-boiled eggs, halved – 4
  • lime, cut into wedges – 2
  • sambal chili – to taste
  • crispy fried shallots – for garnish
  • fresh coriander – for garnish

Instructions

  1. Boil sweet potatoes until soft, then mash them to a smooth consistency.
  2. Heat peanut oil in a pan over medium heat. Sauté the minced garlic and sliced shallots until fragrant.
  3. Add the shrimp paste to the pan and cook until it becomes aromatic.
  4. Stir in the mashed sweet potatoes, coconut milk, and chicken broth. Simmer the mixture for about 10 minutes until it thickens.
  5. Meanwhile, cook the yellow noodles according to package instructions and set aside.
  6. In bowls, divide the noodles and pour the gravy over them.
  7. Top each bowl with bean sprouts, cubed tofu, halved eggs, a squeeze of lime, and sambal chili.
  8. Garnish with crispy fried shallots and fresh coriander before serving.
