Ingredients
- Rice noodles – 8 oz / 225 g
- Chicken broth – 8 cups / 1.9 liters
- Chicken breast, sliced – 2 pieces / 400 g
- Garlic, minced – 2 cloves
- Lime, juice – 1 piece
- Fish sauce – 3 tbsp / 45 ml
- Soy sauce – 2 tbsp / 30 ml
- Green onions, chopped – 4 stalks
- Cilantro, chopped – 1/2 cup / 30 g
- Mint leaves – 1/4 cup / 15 g
- Bean sprouts – 1 cup / 100 g
- Red chili flakes – 1 tsp / 2 g
- Salt – to taste
Instructions
- Cook the rice noodles according to the package instructions. Drain and set aside.
- In a large pot, bring the chicken broth to a boil.
- Add the minced garlic and sliced chicken breast to the broth. Cook until the chicken is fully cooked, about 10 minutes.
- Stir in the lime juice, fish sauce, soy sauce, and red chili flakes. Adjust seasoning with salt as needed.
- Divide the cooked rice noodles among four bowls. Pour the hot soup over the noodles.
- Top with chopped green onions, cilantro, mint leaves, and bean sprouts.
- Serve immediately with extra lime wedges on the side.
