Mıcırık Aşı is a traditional Turkish stew that hails from the heartland of Anatolia. Known for its comforting warmth and layers of rich flavors, Mıcırık Aşı embodies the essence of Turkish home-cooked meals. Traditionally prepared with a medley of vegetables, legumes, and tender meat, this stew is slowly simmered to develop a harmonious blend of spices and aromas that fills the kitchen. Ingredients

  • Lamb shoulder – 500 g / 1 lb, cubed
  • Chickpeas – 200 g / 1 cup, soaked overnight
  • Bulgar wheat – 150 g / 3/4 cup
  • Onions – 200 g / 2 medium, finely chopped
  • Tomato paste – 2 tbsp
  • Garlic – 3 cloves, minced
  • Olive oil – 2 tbsp
  • Turkish red pepper flakes – 1 tsp
  • Cumin powder – 1 tsp
  • Paprika – 1 tsp
  • Salt – to taste
  • Black pepper – to taste
  • Water – 1 litre / 4 cups
  • Fresh parsley – for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onions and cook until translucent, about 5 minutes.
  2. Add the lamb cubes to the pot and sear on all sides until browned.
  3. Stir in the minced garlic and tomato paste. Cook for another 2 minutes until the tomato paste is well incorporated.
  4. Add the soaked chickpeas, Turkish red pepper flakes, cumin, paprika, salt, and black pepper. Stir well to combine.
  5. Pour in the water, bring the mixture to a boil, then reduce the heat to low and let it simmer for 45 minutes.
  6. After 45 minutes, add the bulgur wheat to the pot, stir to combine, and let it continue to simmer for another 15 minutes or until the bulgur is tender.
  7. Adjust seasoning as needed. Serve hot, garnished with fresh parsley.
