Ingredients
- Eggplants – 2 medium / 500 g
- Tomatoes – 3 large / 450 g
- Onion – 1 large / 150 g
- Garlic – 3 cloves
- Fresh ginger – 1 inch piece
- Coconut milk – 1 cup / 240 ml
- Curry powder – 1 tablespoon
- Vegetable oil – 2 tablespoons
- Salt – To taste
- Black pepper – 1/2 teaspoon
- Cilantro – A handful, chopped
Instructions
- Chop the eggplants into 1-inch cubes, and sprinkle them with salt. Set them aside for 15 minutes to release any bitterness.
- Rinse the eggplant cubes under cold water and pat dry with a paper towel.
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions, and sauté until translucent.
- Add the garlic and ginger, both minced, to the pot and cook for an additional two minutes.
- Stir in the curry powder, followed by the tomatoes, cut into chunks. Cook until the tomatoes have softened and started to break down.
- Add the eggplant cubes to the pot, stirring well to coat them with the spices and tomato mixture.
- Pour in the coconut milk, season with salt and black pepper, and simmer gently for about 20 minutes, stirring occasionally.
- Once the eggplants are tender and infused with flavor, turn off the heat and stir in chopped cilantro.
- Serve hot, with rice or bread on the side.
