Ingredients

  • cassava flour – 2 cups / 240 g
  • Paraguayan cheese (or queso fresco) – 1 cup / 150 g, crumbled
  • butter – 4 tablespoons / 60 g, melted
  • milk – 1/2 cup / 120 ml
  • salt – 1 teaspoon / 5 g

Instructions

  1. In a large mixing bowl, combine the cassava flour, crumbled cheese, and salt.
  2. Gradually add melted butter and milk, mixing with your hands until a crumbly dough forms.
  3. Heat a non-stick skillet over medium heat. Take a handful of the dough, press it into a disk, and place it on the skillet.
  4. Cook the mbeju for about 3-5 minutes on each side, or until it’s golden and the cheese is melted.
