Matzvnis is a traditional Georgian soup hailing from the lush and mountainous regions of Georgia. Ingredients

  • Chicken thighs – 1 lb / 450 g
  • Yellow onion – 1 large / 150 g
  • Garlic cloves – 3 cloves
  • Carrots – 2 medium / 150 g
  • Celery stalks – 2 stalks / 120 g
  • Potatoes – 2 medium / 300 g
  • Tomato paste – 2 tbsp
  • Chicken broth – 6 cups / 1.4 L
  • Fresh dill – 1/4 cup, chopped / 15 g
  • Fresh parsley – 1/4 cup, chopped / 15 g
  • Bay leaf – 1 leaf
  • Lemon juice – 2 tbsp
  • Salt – to taste
  • Black pepper – to taste

Instructions

  1. 1. In a large pot, heat some oil over medium heat. Add the chicken thighs and sear them until they’re browned on all sides.
  2. 2. Remove the chicken and set it aside. In the same pot, add chopped onions and sauté until translucent.
  3. 3. Add minced garlic, diced carrots, and celery. Cook for about 5 minutes until they start to soften.
  4. 4. Stir in the tomato paste and cook for another minute.
  5. 5. Add the chicken back to the pot along with the chicken broth and bay leaf. Bring to a simmer.
  6. 6. Dice the potatoes and add them to the pot. Simmer the soup for about 25 minutes or until the vegetables are tender.
  7. 7. Add chopped dill, parsley, and lemon juice. Season with salt and pepper to taste.
  8. 8. Serve hot with a garnish of fresh herbs if desired.
