Ingredients

  • pork shoulder – 800g / 1.76 lbs
  • onions – 2 large, chopped
  • carrots – 3 medium, diced
  • potatoes – 4 medium, diced
  • garlic – 3 cloves, minced
  • beef broth – 500 ml / 2 cups
  • white wine – 250 ml / 1 cup
  • bay leaves – 2
  • thyme – 1 teaspoon
  • salt – to taste
  • black pepper – to taste
  • olive oil – 2 tablespoons

Instructions

  1. Heat olive oil in a large pot over medium heat. Brown the pork shoulder on all sides, then remove it and set aside.
  2. In the same pot, add onions, garlic, and carrots. Sauté until onions are translucent.
  3. Return the pork to the pot. Add the potatoes, beef broth, white wine, bay leaves, and thyme.
  4. Bring to a simmer, cover, and let cook for about 1.5 hours or until the pork is tender. Season with salt and pepper to taste.
  5. Remove bay leaves before serving. Serve hot with a side of crusty bread.
