Matazeez is a traditional Saudi Arabian stew known for its comforting and rustic allure. Ingredients
- lamb shoulder, cubed – 2 lbs / 900 g
- onions, finely chopped – 2 medium / 300 g
- tomatoes, diced – 4 large / 800 g
- carrots, sliced – 2 medium / 150 g
- potatoes, cubed – 2 medium / 300 g
- zucchini, sliced – 2 medium / 250 g
- garlic cloves, minced – 4 cloves / 20 g
- vegetable oil – 3 tbsp / 45 ml
- ground cumin – 2 tsp / 8 g
- ground coriander – 2 tsp / 8 g
- black pepper – 1 tsp / 4 g
- salt – 2 tsp / 12 g
- water or broth – 6 cups / 1.4 liters
- all-purpose flour – 2 cups / 240 g
- warm water for dough – 3/4 cup / 180 ml
Instructions
- In a large pot, heat the vegetable oil over medium-high heat. Add cubed lamb and brown evenly.
- Add chopped onions and minced garlic, sautéing until tender and aromatic.
- Stir in the diced tomatoes, cooking until they break down and create a thick base.
- Mix in sliced carrots, potatoes, and zucchini. Sprinkle ground cumin, coriander, salt, and pepper.
- Pour in water or broth, bringing the mixture to a simmer. Cover and cook on low for 45 minutes or until lamb is tender.
- Meanwhile, in a bowl, mix flour and warm water to create a dough. Knead until smooth.
- Roll small portions of dough into thin discs. Add to the simmering stew and cook for an additional 15 minutes.
- Serve the stew hot, ensuring each bowl has a combination of lamb, vegetables, and dough.
