Masyaura is a traditional Nepali vegetarian dish, a flavorful delight rooted in agricultural innovation. It originated in the mountainous regions of Nepal, where preserving vegetables during the off-season was crucial. Masyaura predominantly features fermented dried lentil and vegetable nuggets, often mingled with a spicy and tangy gravy, making it a staple in Nepali cuisine. Known for its rich texture and robust flavors, it combines gastronomic creativity with cultural heritage.
Ingredients
- Masyaura (lentil nuggets) – 1 cup / 100g
- Onion, finely chopped – 1 medium / 150g
- Garlic, minced – 3 cloves / 15g
- Ginger, minced – 1 tablespoon / 15g
- Tomato puree – 1 cup / 240ml
- Cumin powder – 1 teaspoon / 3g
- Coriander powder – 1 teaspoon / 3g
- Turmeric powder – 1/2 teaspoon / 1g
- Red chili powder – 1/2 teaspoon / 1g
- Mustard oil – 2 tablespoons / 30ml
- Salt – to taste
- Water – 2 cups / 480ml
- Coriander leaves, chopped – 2 tablespoons / 8g
Instructions
- Heat mustard oil in a heavy-bottomed pan over medium heat.
- Sauté chopped onions until golden brown, about 5-7 minutes.
- Add minced garlic and ginger, cooking until fragrant, approximately 2 minutes.
- Stir in tomato puree, cumin, coriander, turmeric, and red chili powder. Cook until the mixture thickens, about 5 minutes.
- Add masyaura and water. Stir well and bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes or until masyaura is tender.
- Season with salt to taste.
- Garnish with chopped coriander leaves before serving.
