Mastoba is a traditional, heartwarming soup hailing from Tajikistan, a country known for its rich culinary heritage influenced by Persian, Russian, and Central Asian flavors. Ingredients
- beef – 500 g / 1.1 lb
- onion – 1 large / 150 g, chopped
- carrots – 2 medium / 120 g, diced
- potatoes – 2 medium / 300 g, diced
- tomato paste – 3 tablespoons / 45 g
- rice – 1 cup / 200 g
- garlic – 3 cloves, minced
- water – 6 cups / 1.4 liters
- bay leaf – 2 leaves
- cumin – 1 teaspoon
- salt – to taste
- black pepper – to taste
- oil – 2 tablespoons / 30 ml
Instructions
- Heat oil in a large pot over medium heat. Add chopped onions and cook until translucent.
- Add the beef to the pot and cook until browned on all sides.
- Stir in the tomato paste and mix well with the meat.
- Add diced carrots and potatoes to the pot, followed by minced garlic, cooking for another 3 minutes.
- Pour in the water and bring to a boil.
- Add rice, bay leaf, cumin, salt, and pepper. Stir to combine.
- Reduce heat to low and let the soup simmer for about 30–40 minutes, stirring occasionally, until the meat and rice are cooked through.
- Adjust seasoning to taste and serve hot.
