Maslanica is a traditional Bosnian pastry, richly steeped in the cultural tapestry of the Balkans. Known for its layered, flaky texture and robust buttery flavor, Maslanica is an integral part of family gatherings and festive occasions in Bosnia and Herzegovina. This pastry embodies the comfort and homeliness of Balkan culinary traditions, often shared around tables with loved ones. The dish’s origins trace back to the blend of Ottoman influences with local ingredients, resulting in a hearty, yet elegant, creation that highlights both simplicity and sophistication.

Ingredients

  • All-purpose flour – 3 cups / 360 g
  • Water – 1 cup / 240 ml
  • Salt – 1 teaspoon / 5 g
  • Butter – 1 cup unsalted / 225 g
  • Egg – 1 large

Instructions

  1. In a large bowl, combine flour and salt. Gradually add in water, kneading until a soft dough forms. Cover and let rest for 15 minutes.
  2. Divide the dough into two equal parts. Roll out each piece into a thin sheet.
  3. Melt the butter. Brush the first sheet of dough generously with melted butter.
  4. Roll the buttered sheet into a tight log, then coil it into a spiral shape. Repeat with the second sheet.
  5. Place both spirals into a greased baking pan. Beat the egg and brush it over the tops.
  6. Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until golden brown.
  7. Allow to cool slightly before serving to maintain its warm, flaky texture.

Substitutions

  • Butter -> Margarine
  • All-purpose flour -> Whole wheat flour

Enhancements in the Next Evolution

  • Incorporate a resting period for the dough to enhance gluten development and elasticity.
  • Try incorporating a filling like cheese or herbs for added flavor.
