Marinated pork stew (adobo arequipeño) – Classic

Adobo Arequipeño is a traditional Peruvian stew hailing from the Arequipa region. Ingredients
- Pork shoulder – 2 lbs / 900 g
- Red wine vinegar – 1 cup / 240 ml
- Garlic cloves – 6 cloves, minced
- Aji panca paste – 2 tbsp / 30 g
- Cumin – 2 tsp / 4 g
- Paprika – 1 tsp / 2 g
- Oregano – 1 tsp / 1 g
- Salt – 1 ½ tsp / 9 g
- Black pepper – 1 tsp / 2 g
- Bay leaves – 2 leaves
- Onion – 1 large, diced
- Chicken stock – 2 cups / 480 ml
- Potatoes – 2 large, peeled and quartered
Instructions
- Cut the pork shoulder into large cubes and place in a large bowl.
- In a separate bowl, mix red wine vinegar, minced garlic, aji panca paste, cumin, paprika, oregano, salt, and black pepper to create the marinade.
- Pour the marinade over the pork, ensuring all pieces are evenly coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- In a large pot, heat a bit of oil over medium heat. Add the marinated pork, searing it on all sides until browned.
- Add the diced onion and cook until translucent.
- Pour in the chicken stock and add the bay leaves. Bring to a boil, then reduce the heat to a simmer.
- Cover and cook for about 1.5 hours until the pork is tender.
- Add the potatoes and cook for another 30 minutes until they are soft and the stew is thick and flavorful.
- Remove bay leaves before serving.
