Ingredients

  • ripe mangoes – 4 large / about 1.5 kg
  • granulated sugar – 3 cups / 600 g
  • white vinegar – 2 cups / 480 ml
  • ginger, minced – 2 tablespoons / 15 g
  • garlic, minced – 2 cloves
  • red chili flakes – 1 teaspoon / 2 g
  • salt – 1 teaspoon / 5 g
  • cumin seeds – 1 teaspoon / 2 g
  • mustard seeds – 1 teaspoon / 2 g

Instructions

  1. Peel and dice the mangoes into small cubes, discarding the pits.
  2. In a large saucepan, combine the mangoes, sugar, vinegar, ginger, garlic, red chili flakes, salt, cumin seeds, and mustard seeds.
  3. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar.
  4. Reduce the heat to low and simmer for about 1 hour or until the chutney thickens, stirring occasionally to prevent sticking.
  5. Remove the saucepan from the heat and let the chutney cool to room temperature.
  6. Transfer the chutney to sterilized jars and seal tightly. Store in the refrigerator for up to 3 months.
