Ingredients

  • pearl barley – 1 cup / 200 g
  • smoked pancetta – 200 g / 7 oz
  • onion – 1 large / 200 g
  • carrot – 2 medium / 150 g
  • celery – 2 stalks / 120 g
  • potato – 1 large / 300 g
  • garlic – 2 cloves
  • bay leaf – 2 leaves
  • olive oil – 2 tbsp / 30 ml
  • vegetable broth – 6 cups / 1.5 L
  • salt – to taste
  • black pepper – to taste
  • fresh parsley – for garnish

Instructions

  1. Rinse the pearl barley under cold water until the water runs clear. Set aside.
  2. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for 5-7 minutes until soft.
  3. Stir in minced garlic and diced pancetta, cooking for another 3 minutes until fragrant.
  4. Add the diced potato, pearl barley, and bay leaves. Stir to mix well.
  5. Pour in the vegetable broth and bring to a boil. Lower heat and let simmer for 30-40 minutes, or until the barley is tender.
  6. Season with salt and black pepper to taste.
  7. Remove bay leaves before serving. Garnish with freshly chopped parsley and enjoy!
