  • celery stalks, diced – 2 stalks / 100 g
  • potatoes, peeled and cubed – 300 g / 10.6 oz
  • corn kernels – 200 g / 7 oz
  • cannellini beans, drained – 1 can (400 g / 14 oz)
  • vegetable broth – 1 liter / 4 cups
  • bay leaf – 1
  • salt – to taste
  • black pepper – to taste
  • parsley, chopped – 2 tablespoons / 10 g

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add diced pancetta and sauté until crispy.
  2. Stir in the chopped onion and minced garlic, cooking until the onion becomes translucent.
  3. Add the diced carrot and celery, and cook for another 5 minutes until vegetables start to soften.
  4. Mix in the cubed potatoes, corn kernels, and drained cannellini beans.
  5. Pour in the vegetable broth, add the bay leaf, and season with salt and pepper.
  6. Bring the stew to a gentle boil, then reduce the heat to low. Let it simmer for about 30-40 minutes, or until the potatoes are tender.
  7. Remove the bay leaf, adjust seasoning as necessary, and garnish with chopped parsley before serving.
