- cannellini beans, drained – 1 can (400 g / 14 oz)
- vegetable broth – 1 liter / 4 cups
- bay leaf – 1
- salt – to taste
- black pepper – to taste
- parsley, chopped – 2 tablespoons / 10 g
Instructions
- Heat the olive oil in a large pot over medium heat. Add diced pancetta and sauté until crispy.
- Stir in the chopped onion and minced garlic, cooking until the onion becomes translucent.
- Add the diced carrot and celery, and cook for another 5 minutes until vegetables start to soften.
- Mix in the cubed potatoes, corn kernels, and drained cannellini beans.
- Pour in the vegetable broth, add the bay leaf, and season with salt and pepper.
- Bring the stew to a gentle boil, then reduce the heat to low. Let it simmer for about 30-40 minutes, or until the potatoes are tender.
