Manakish – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Manakish is a traditional Lebanese flatbread, originating from the aromatic streets of Lebanon. Often regarded as the Middle Eastern pizza, it is frequently topped with za’atar—a blend of earthy spices, sumac, and toasted sesame seeds—or with savory cheese. Manakish is typically enjoyed for breakfast or as a comforting street food option. Its simplicity in ingredients, yet complexity in flavor, makes it a beloved staple across the Levant.

Ingredients

  • all-purpose flour – 4 cups / 480 g
  • warm water – 1 1/4 cups / 300 ml
  • olive oil – 1/4 cup / 60 ml
  • active dry yeast – 2 teaspoons
  • sugar – 1 teaspoon
  • salt – 1 teaspoon
  • za’atar spice mix – 1/2 cup / 50 g
  • olive oil (for topping) – 1/4 cup / 60 ml

Instructions

  1. In a small bowl, dissolve the sugar in warm water, then sprinkle the yeast over top. Allow it to sit for 5-10 minutes, until frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, stirring until a soft dough forms.
  3. Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, approximately 1 to 1.5 hours.
  5. Preheat your oven to 475°F (245°C) and line a baking sheet with parchment paper.
  6. Divide the dough into 4 equal pieces and roll each piece into a circular shape about 1/4 inch thick.
  7. Mix the za’atar with 1/4 cup olive oil to form a paste. Spread a portion of the za’atar mixture over each dough circle.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden and crispy.
  9. Serve warm, ideally with olives, fresh vegetables, or labneh (strained yogurt).

Substitutions

  • all-purpose flour -> whole wheat flour
  • za’atar spice mix -> thyme and sesame seeds with a pinch of salt

Enhancements in the Next Evolution

  • Try adding a blend of mozzarella and feta cheese on top of the za’atar for a cheesy variant.
  • Incorporate a mix of chopped tomatoes and onions into the za’atar paste for added texture.
  • Brush the edges with garlic-infused oil before baking for an extra flavor dimension.
