Ingredients
- firm white fish fillets (such as kingfish or cod) – 500 g / 1 lb
- coconut oil – 2 tablespoons
- mustard seeds – 1 teaspoon
- fenugreek seeds – 1/2 teaspoon
- onion (sliced) – 1 large
- green chilies (slit) – 2
- ginger (minced) – 1 tablespoon
- garlic (minced) – 4 cloves
- curry leaves – 1 sprig
- tamarind pulp – 2 tablespoons
- coconut milk – 1 cup / 240 ml
- turmeric powder – 1/2 teaspoon
- red chili powder – 1 teaspoon
- coriander powder – 1 tablespoon
- salt – to taste
Instructions
- Heat coconut oil in a pan over medium heat. Add mustard seeds and fenugreek seeds, letting them splutter.
- Add sliced onion, green chilies, ginger, and garlic to the pan. Sauté until onions are translucent.
- Mix in curry leaves, turmeric powder, red chili powder, and coriander powder. Cook for another minute.
- Add tamarind pulp and coconut milk to the pan, stir well, and bring to a gentle simmer.
- Gently place fish fillets into the curry, ensuring they are submerged. Cover and cook for 10-15 minutes or until fish is cooked through.
- Season with salt to taste and serve hot with steamed rice.
