Malabar chicken biryani – Classic

Malabar Chicken Biryani is an aromatic and flavorful rice dish originating from the Malabar region of Kerala, India. This coastal area is celebrated for its rich culinary traditions, integrating spices, coconut, and seafood into its cuisine. Malabar Biryani stands out for its unique preparation, combining fragrant basmati rice with tender chicken and a blend of spices such as saffron, cardamom, and cinnamon. The biryani is traditionally prepared in a layered fashion and cooked to perfection. Ingredients

  • Basmati rice – 3 cups / 600 g
  • Chicken thighs, bone-in – 1 kg
  • Onions, thinly sliced – 4 large / 600 g
  • Tomatoes, chopped – 3 medium / 300 g
  • Yogurt – 1 cup / 240 g
  • Ginger-garlic paste – 3 tablespoons / 45 g
  • Green chilies, slit – 4
  • Coriander powder – 2 teaspoons / 4 g
  • Turmeric powder – 1 teaspoon / 2 g
  • Red chili powder – 1 teaspoon / 2 g
  • Garam masala powder – 1 teaspoon / 2 g
  • Cardamom pods – 6
  • Cloves – 6
  • Cinnamon sticks – 2 one-inch pieces
  • Bay leaves – 2
  • Saffron strands – A pinch, soaked in 2 tablespoons warm milk
  • Mint leaves – 1 cup / 60 g, chopped
  • Coriander leaves – 1 cup / 60 g, chopped
  • Ghee – 1/4 cup / 60 ml
  • Oil – 4 tablespoons / 60 ml
  • Salt – to taste

Instructions

  1. Wash and soak the basmati rice in water for 30 minutes, then drain.
  2. Heat oil in a large frying pan over medium heat, add sliced onions, and cook until golden brown. Remove half for garnishing.
  3. In the same pan, add ginger-garlic paste, green chilies, and sauté until fragrant.
  4. Add tomatoes, cook until soft, then add turmeric, coriander, red chili powder, and garam masala.
  5. Stir in yogurt and cook for 5 minutes. Add chicken and salt, cook until chicken is tender, around 15 minutes.
  6. In a large pot, bring water to a boil, add bay leaves, cardamom, cloves, cinnamon, and salt.
  7. Add the soaked rice, cook until 70% done. Drain the rice.
  8. In a heavy-bottomed pot, layer half of the chicken at the bottom, followed by half of the rice.
  9. Sprinkle some mint, coriander leaves, and fried onions.
  10. Repeat layers with the remaining chicken and rice, add the saffron milk on top.
  11. Cover the pot tightly, cook on low heat for 20 minutes.
  12. Serve hot garnished with remaining fried onions and coriander leaves.

  • Basmati rice -> Jasmine rice
