Makhani Sauce – Classic

Makhani Sauce, known for its rich, creamy, and buttery texture, hails from the culinary heart of North India, particularly Punjab. Bursting with robust flavors of tomatoes and aromatic spices, this sauce forms the base for iconic dishes like Butter Chicken and Paneer Makhani. Traditionally, it was crafted to combine the native love for butter (makhan) with their extensive spice palate, creating a fusion that delights any food enthusiast.

Ingredients

  • Butter – 1/2 cup / 115 g
  • Oil – 2 tbsp
  • Cinnamon Stick – 1 piece
  • Cloves – 3-4
  • Bay Leaf – 1
  • Green Cardamom – 3 pods
  • Onion, finely chopped – 1 large / 200 g
  • Ginger-Garlic Paste – 2 tbsp
  • Tomato Puree – 2 1/2 cups / 600 ml
  • Red Chili Powder – 1 tsp
  • Garam Masala – 1 tsp
  • Honey or Sugar – 2 tbsp
  • Kasuri Methi (Dried Fenugreek Leaves) – 1 tbsp
  • Cream – 1 cup / 240 ml

Instructions

  1. Melt butter and oil in a large pan over medium heat.
  2. Add cinnamon, cloves, bay leaf, and cardamom. Sauté until fragrant.
  3. Add onions and cook until golden brown.
  4. Stir in ginger-garlic paste and cook for another 2 minutes.
  5. Mix in tomato puree and let simmer for 15-20 minutes until oil separates from the sauce.
  6. Add red chili powder and garam masala; stir well.
  7. Sweeten with honey or sugar, then add crushed kasuri methi.
  8. Stir in cream, let it cook for a few minutes until well combined, then remove spices and serve or cool for storage.
