Majboos, a cherished dish from the Arabian Gulf, is the epitome of both comfort food and celebratory feasts. Rooted in the traditions of the Middle East, this dish features fragrant basmati rice infused with a medley of spices and tender pieces of marinated chicken. Ingredients
- Chicken pieces – 1 kg
- Basmati rice – 2 cups / 400 g
- Onion, chopped – 1 large
- Tomato, diced – 2 medium
- Garlic cloves, minced – 4
- Ground turmeric – 1 tsp
- Ground cumin – 1 tsp
- Ground coriander – 1 tsp
- Cardamom pods – 5
- Cinnamon stick – 1
- Cloves – 4
- Chicken stock – 4 cups / 960 ml
- Salt – to taste
- Black pepper – to taste
- Ghee or olive oil – 4 tbsp
- Fresh coriander, chopped – ½ cup / 15 g
- Lime, cut into wedges – 1
Instructions
- Heat ghee or olive oil in a large pot over medium heat.
- Add chopped onions and sauté until golden brown.
- Stir in the garlic and sauté for an additional minute.
- Add chicken pieces to the pot and brown them on all sides.
- Mix in diced tomatoes, ground turmeric, cumin, coriander, cardamom pods, cinnamon stick, and cloves.
- Season with salt and black pepper, and cook for 5 minutes.
- Pour in chicken stock, bring to a boil, then reduce heat, cover, and simmer for 25 minutes.
- Rinse basmati rice thoroughly and add to the pot, ensuring the chicken and rice are well combined.
- Cover the pot and cook on low heat until the rice is done, approximately 15 minutes.
- Garnish with fresh coriander and serve with lime wedges.
