Ingredients

  • white fish fillets – 4 fillets (about 600 g / 1.3 lbs)
  • banana leaves – 4 large leaves
  • achiote (annatto) paste – 2 tablespoons
  • fresh cilantro – 1/2 cup / 30 g, chopped
  • red onion – 1 medium, thinly sliced
  • lime juice – 2 tablespoons
  • olive oil – 2 tablespoons
  • salt – to taste
  • pepper – to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a bowl, combine the annatto paste, lime juice, olive oil, salt, and pepper to create a marinade.
  3. Rub the fish fillets generously with the marinade on all sides.
  4. Lay a banana leaf flat and place one fillet in the center. Top the fish with onion slices and chopped cilantro.
  5. Fold the banana leaf over the fish to create a secure parcel. Use kitchen twine if necessary to keep it closed.
  6. Place the wrapped fish parcels on the grill and cook for about 15-20 minutes, turning halfway through, until the fish is cooked through.
  7. Serve the parcels hot, allowing guests to unwrap them at the table to enjoy the aromatic steam.
