Mahshi is a beloved traditional dish from Syria, deeply rooted in the rich cultural and culinary heritage of the country. This comforting and savory dish features vegetables such as zucchini, bell peppers, and eggplants meticulously stuffed with a fragrant, spiced rice mixture. The word ‘Mahshi’ means ‘stuffed’ in Arabic, reflecting the dish’s essence as a filling meal, perfect for gatherings and celebrations. Ingredients

  • Zucchini – 6 medium / 900 g
  • Eggplants – 4 medium / 800 g
  • Green bell peppers – 4 large / 600 g
  • Rice – 1.5 cups / 300 g
  • Ground beef or lamb – 300 g
  • Tomato paste – 3 tablespoons / 50 g
  • Olive oil – 3 tablespoons / 45 ml
  • Onion – 1 large, finely chopped / 150 g
  • Garlic – 4 cloves, minced
  • Cinnamon – 1 teaspoon / 2 g
  • Allspice – 1 teaspoon / 2 g
  • Salt – 2 teaspoons / 12 g
  • Black pepper – 1 teaspoon / 2 g
  • Mint leaves – 1/4 cup, chopped / 10 g
  • Water – 3 cups / 720 ml
  • Lemon juice – 2 tablespoons / 30 ml

Instructions

  1. Prepare the vegetables by hollowing out the zucchini, eggplants, and bell peppers. Set aside.
  2. Rinse the rice under cold water until the water runs clear to remove excess starch.
  3. In a large bowl, combine the rice, ground beef or lamb, tomato paste, olive oil, onion, garlic, cinnamon, allspice, salt, and black pepper. Mix until well combined.
  4. Stuff the hollowed vegetables with the rice mixture, leaving a small gap at the top to allow the rice to expand.
  5. Arrange the stuffed vegetables in a large pot. Add water and lemon juice, ensuring the vegetables are partially submerged in the liquid.
  6. Bring to a boil over medium-high heat. Then, reduce heat to a simmer, cover, and cook for about 45 minutes, or until the rice and vegetables are tender.
  7. Sprinkle the chopped mint leaves over the cooked Mahshi before serving.
