Ingredients

  • semolina flour – 2 cups / 320 g
  • water – 1 cup / 240 ml
  • salt – 1 tsp
  • olive oil – 2 tbsp
  • onion, finely chopped – 2 medium / 300 g
  • tomatoes, diced – 4 medium / 500 g
  • red bell pepper, diced – 1 large / 150 g
  • paprika – 1 tsp
  • harissa paste – 1 tbsp

Instructions

  1. In a large bowl, combine the semolina flour and salt. Gradually add water, kneading continuously until a soft, smooth dough forms.
  2. Divide the dough into medium-sized balls, cover, and let it rest for 30 minutes.
  3. Meanwhile, heat olive oil in a pan over medium heat. Sauté onions until translucent.
  4. Add tomatoes, bell pepper, paprika, and harissa. Cook until the vegetables have softened and the mixture is thickened, about 15 minutes.
  5. Roll out the dough balls into thin pancakes. Place a generous spoonful of the filling in the center and fold into a rectangle.
  6. Cook the filled pancakes in a lightly oiled frying pan over medium heat until golden and crispy on both sides. Serve hot.
