Mafalda is a traditional Italian bread originating from Sicily. Ingredients
- All-purpose flour – 4 cups / 520 g
- Warm water – 1 1/2 cups / 360 ml
- Active dry yeast – 2 1/4 tsp / 7 g
- Olive oil – 2 tbsp / 30 ml
- Sugar – 1 tsp / 4 g
- Salt – 1 1/2 tsp / 9 g
- Sesame seeds – 1/2 cup / 70 g
Instructions
- In a bowl, dissolve the sugar in warm water and sprinkle the yeast on top. Allow it to sit for 5-10 minutes until it foams.
- In a large bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
- Mix the dough until it comes together, then knead on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1-2 hours or until doubled in size.
- Preheat the oven to 400°F (200°C). Punch down the dough and divide it into two equal pieces.
- Shape each piece into an S-shape and place on a lined baking sheet. Brush with water and sprinkle generously with sesame seeds.
- Bake for 20-25 minutes or until the crust is golden and crispy. Let cool before serving.
