Ingredients

  • ripe plantains – 6 large / approximately 1.8 kg
  • butter – 1/4 cup / 56 g
  • sugar – 1/4 cup / 50 g
  • cream – 1 cup / 240 ml
  • grated cheese (like queso seco or mozzarella) – 1 cup / 100 g
  • cinnamon – 1 teaspoon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice the plantains in half lengthwise.
  3. In a large frying pan, melt butter over medium heat and fry the plantains until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
  4. In a large baking dish, arrange a layer of fried plantains covering the bottom.
  5. Sprinkle sugar and cinnamon evenly over the layer of plantains.
  6. Pour half of the cream evenly over the plantains, then sprinkle with half of the grated cheese.
  7. Repeat the layers with the remaining plantains, sugar, cinnamon, cream, and cheese.
  8. Bake for 25-30 minutes or until the cheese is melted and bubbly.
  9. Let it cool slightly before serving.
