Ingredients

  • macreuse (beef shoulder) – 2 lbs / 900 g
  • water – 8 cups / 1.9 liters

  • onion – 1 large, quartered
  • garlic cloves – 4, smashed
  • bouquet garni – 1 (parsley, thyme, bay leaf)
  • salt – 2 tsp / 10 g
  • black peppercorns – 1 tsp / 5 g
  • potatoes – 4, peeled and halved
  • turnips – 2, peeled and quartered

Instructions

  1. In a large pot, bring the water to a boil.
  2. Add the macreuse, ensuring it is fully submerged.
  3. Skim off any foam that forms on the surface as you maintain a gentle simmer.
  4. Add the carrots, leeks, celery, onion, garlic, bouquet garni, salt, and peppercorns.
  5. Cover partially and let it simmer gently for 1.5 to 2 hours until the beef is tender.
  6. After 1 hour, add the potatoes and turnips to the pot.
  7. Once everything is tender, remove and discard the bouquet garni.
  8. Serve hot, dividing the beef and vegetables among four bowls and ladle over the broth.
