Ingredients

  • Fresh white fish (Rohu or similar) – 4 pieces / 500 g
  • Mustard oil – 3 tbsp
  • Onions – 2 large / 300 g, finely sliced
  • Tomatoes – 2 medium / 200 g, chopped
  • Turmeric powder – 1 tsp
  • Red chili powder – 1 tsp
  • Cumin seeds – 1 tsp
  • Bay leaves – 2
  • Ginger paste – 1 tsp
  • Garlic paste – 1 tsp
  • Green chilies – 2, slit
  • Salt – to taste
  • Water – 3 cups / 720 ml
  • Coriander leaves – for garnish

Instructions

  1. Heat mustard oil in a pan until it reaches smoking point, then reduce the heat.
  2. Add the bay leaves and cumin seeds. Sauté for a few seconds until aromatic.
  3. Add the sliced onions and fry until golden brown.
  4. Stir in the ginger and garlic paste, sautéing for a minute until the raw smell disappears.
  5. Add turmeric powder and chili powder, cooking them in oil for 30 seconds to enhance their flavors.
  6. Add chopped tomatoes and cook until they soften and the oil separates.
  7. Gently add fish pieces, turning carefully to coat them in the spice mixture.
  8. Add water, green chilies, and salt. Bring to a simmer.
  9. Cover and cook on low heat for 15-20 minutes until the fish is tender and the stew has a harmonious flavor.
  10. Garnish with coriander leaves and serve hot with steamed rice.
