Machboos – Classic
This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Machboos is a traditional dish widely regarded as the national dish of several Gulf countries, including Bahrain, Kuwait, and Saudi Arabia. Originating from the Arabian Peninsula, Machboos is a fragrant rice dish seasoned with a rich blend of Arabic spices. Often compared to biryani due to its layered spices and aromatic rice, Machboos stands out with the inclusion of dried limes, known as ‘loomi,’ which impart a unique tanginess to the dish. Customarily prepared with chicken or lamb, this dish is a staple at celebrations and family gatherings, bringing warmth and a sense of heritage to any table.

Instructions
- Rinse the basmati rice under cold water until the water runs clear and set aside to soak for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown.
- Add ginger and garlic, sauté for 2 minutes until fragrant.
- Stir in tomato paste and spices (cinnamon, cumin, coriander, turmeric, cardamom, bay leaves, cloves) and cook for another 2 minutes.
