Ingredients
- dried beef (machacado) – 200 g / 7 oz
- tomatoes, diced – 4 medium / 480 g
- onion, finely chopped – 1 large / 150 g
- jalapeño peppers, sliced – 2 / 30 g
- eggs – 6 large
- olive oil – 2 tbsp / 30 ml
- garlic, minced – 2 cloves / 6 g
- salt – to taste
- black pepper – to taste
- fresh cilantro, chopped – 1/4 cup / 10 g
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic, sauté until the onion is translucent.
- Stir in the jalapeños and cook for an additional 2 minutes.
- Add the diced tomatoes and cook until they start to break down, about 5 minutes.
- Mix in the machacado and cook until heated through, about 5 minutes.
- Whisk the eggs in a bowl, season with salt and pepper, then pour them over the machacado mixture.
- Cook gently, stirring occasionally, until the eggs are set.
- Garnish with fresh cilantro before serving.
