Ingredients

  • dried beef (machacado) – 200 g / 7 oz
  • tomatoes, diced – 4 medium / 480 g
  • onion, finely chopped – 1 large / 150 g
  • jalapeño peppers, sliced – 2 / 30 g
  • eggs – 6 large
  • olive oil – 2 tbsp / 30 ml
  • garlic, minced – 2 cloves / 6 g
  • salt – to taste
  • black pepper – to taste
  • fresh cilantro, chopped – 1/4 cup / 10 g

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and garlic, sauté until the onion is translucent.
  3. Stir in the jalapeños and cook for an additional 2 minutes.
  4. Add the diced tomatoes and cook until they start to break down, about 5 minutes.
  5. Mix in the machacado and cook until heated through, about 5 minutes.
  6. Whisk the eggs in a bowl, season with salt and pepper, then pour them over the machacado mixture.
  7. Cook gently, stirring occasionally, until the eggs are set.
  8. Garnish with fresh cilantro before serving.
