Lyulya kebab – Classic

Lyulya Kebab is a traditional Azerbaijani meat dish known for its juicy and flavorful minced meat skewers. Originating in the Caucasus region, it is a beloved staple in Azerbaijani cuisine, celebrated for its simplicity and rich flavors. The kebabs are typically made with a mix of ground lamb and beef, seasoned with onions and a variety of spices, then grilled over open flames to achieve a succulent, smoky taste.

Ingredients

  • ground lamb – 500 g / 1.1 lbs
  • ground beef – 500 g / 1.1 lbs
  • onion – 1 large / 150 g
  • garlic cloves – 2
  • sumac – 1 tbsp
  • ground coriander – 1 tsp
  • cumin powder – 1 tsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • fresh parsley – 1/4 cup / 15 g
  • flatbread – 4 pieces

Instructions

  1. Grate the onion and garlic, then combine with the ground lamb and beef in a large bowl.
  2. Add sumac, ground coriander, cumin powder, salt, and black pepper to the meat mixture.
  3. Chop the parsley finely and add to the mixture. Knead well for about 5-7 minutes until the mixture is sticky.
  4. Cover the bowl and let the mixture rest in the refrigerator for at least 30 minutes to allow flavors to meld.
  5. Preheat a grill to medium-high heat. Divide the meat mixture into 8 equal portions and shape each onto metal skewers forming elongated patties.
  6. Grill on each side for about 4-5 minutes until cooked through and slightly charred.
  7. Serve hot with flatbread and optional grilled vegetables.
