Lyulya Kebab is a traditional Azerbaijani meat dish known for its juicy and flavorful minced meat skewers. Originating in the Caucasus region, it is a beloved staple in Azerbaijani cuisine, celebrated for its simplicity and rich flavors. The kebabs are typically made with a mix of ground lamb and beef, seasoned with onions and a variety of spices, then grilled over open flames to achieve a succulent, smoky taste.
Ingredients
- ground lamb – 500 g / 1.1 lbs
- ground beef – 500 g / 1.1 lbs
- onion – 1 large / 150 g
- garlic cloves – 2
- sumac – 1 tbsp
- ground coriander – 1 tsp
- cumin powder – 1 tsp
- salt – 1 tsp
- black pepper – 1/2 tsp
- fresh parsley – 1/4 cup / 15 g
- flatbread – 4 pieces
Instructions
- Grate the onion and garlic, then combine with the ground lamb and beef in a large bowl.
- Add sumac, ground coriander, cumin powder, salt, and black pepper to the meat mixture.
- Chop the parsley finely and add to the mixture. Knead well for about 5-7 minutes until the mixture is sticky.
- Cover the bowl and let the mixture rest in the refrigerator for at least 30 minutes to allow flavors to meld.
- Preheat a grill to medium-high heat. Divide the meat mixture into 8 equal portions and shape each onto metal skewers forming elongated patties.
- Grill on each side for about 4-5 minutes until cooked through and slightly charred.
- Serve hot with flatbread and optional grilled vegetables.
