Ingredients
- Pork shoulder – 500 g / 1.1 lbs
- Cornstarch – 1/2 cup / 60 g
- Egg – 1 large
- Vegetable oil – for frying
- Garlic – 2 cloves, minced
- Ginger – 1-inch piece, minced
- Soy sauce – 3 tbsp
- Rice vinegar – 2 tbsp
- Sugar – 3 tbsp
- Ketchup – 4 tbsp
- Water – 1/2 cup / 120 ml
- Bell pepper – 1 large, cut into cubes
- Pineapple chunks – 1/2 cup / 120 g
- Scallions – 2, cut into 1-inch pieces
Instructions
- Cut the pork shoulder into 1-inch cubes. Season lightly with salt.
- In a bowl, beat the egg and add cornstarch to create a batter. Coat the pork cubes thoroughly in the batter.
- Heat vegetable oil in a deep pan over medium-high heat and deep-fry the pork until golden and crispy. Remove and drain on paper towels.
- In a separate pan, heat a tablespoon of oil over medium heat. Add minced garlic and ginger, frying until fragrant.
- Stir in soy sauce, rice vinegar, sugar, ketchup, and water to create the sauce. Allow it to simmer for 5 minutes.
- Add bell pepper, pineapple, and the fried pork into the sauce, stirring to coat everything evenly. Cook for another 3 minutes.
- Garnish with scallions before serving.
