Ingredients

  • olive oil – 3 tbsp / 45 ml
  • onion, finely chopped – 1 large / 150 g
  • garlic cloves, minced – 4 cloves
  • cumin powder – 2 tsp / 4 g
  • paprika – 2 tsp / 4 g
  • cinnamon stick – 1 stick
  • canned tomatoes, crushed – 2 cups / 480 ml
  • white beans, cooked and drained – 3 cups / 500 g
  • water or vegetable stock – 2 cups / 480 ml
  • salt – 1 tsp / 6 g
  • black pepper – 1/2 tsp / 1 g
  • fresh cilantro, chopped – 1/4 cup / 15 g
  • lemon, cut into wedges – 1 whole

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onions and garlic, and sauté until the onions are translucent, about 5 minutes.
  3. Stir in the cumin, paprika, and cinnamon stick, and cook for another minute until fragrant.
  4. Add the crushed tomatoes and cook for 5 minutes, stirring occasionally.
  5. Add the cooked white beans and water or vegetable stock. Season with salt and black pepper.
  6. Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, stirring occasionally.
  7. Remove the cinnamon stick. Stir in the fresh cilantro.
  8. Serve hot, garnished with lemon wedges.
