Ingredients

  • Lotus root – 300 g / 10.5 oz, peeled and grated
  • Potatoes – 200 g / 7 oz, boiled and mashed
  • Green chili – 1, finely chopped
  • Ginger – 1 inch / 2 cm, grated
  • Coriander leaves – 2 tbsp, finely chopped
  • Roasted cumin powder – 1 tsp
  • Garam masala – 1 tsp
  • Salt – to taste
  • Breadcrumbs – 1 cup / 100 g
  • Oil – for shallow frying

Instructions

  1. Peel and grate the lotus root. Ensure you squeeze out any excess water from it.
  2. In a large bowl, mix the grated lotus root, mashed potatoes, green chili, grated ginger, chopped coriander leaves, roasted cumin powder, garam masala, and salt.
  3. Shape the mixture into small round patties, about 2 inches in diameter.
  4. Coat each patty with breadcrumbs and set aside on a plate.
  5. Heat oil in a frying pan over medium heat. Shallow fry the patties until they are golden brown and crispy on each side, about 3-4 minutes per side.
  6. Remove from the pan and drain excess oil on paper towels.
  7. Serve hot with mint chutney or yogurt dip.

  • Lotus root -> Yam or taro root
  • Breadcrumbs -> Crushed cornflakes
