Ingredients

  • salt – 1/2 teaspoon / 3 g
  • blanched almonds – 1/2 cup / 75 g

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, beat the eggs with the sugar and vanilla extract until creamy.
  4. Gradually add the egg mixture to the flour mixture to form a dough.
  5. Incorporate the almonds into the dough and divide it into two equal parts.
  6. Shape each part into a log about 12 inches (30 cm) long and 3 inches (7 cm) wide.
  7. Place on the prepared baking sheet and bake for 25-30 minutes or until firm to the touch.
  8. Remove from the oven and let cool slightly, then slice diagonally into 1/2 inch (1 cm) thick slices.
  9. Arrange the slices back on the baking sheet and bake again for 10-15 minutes, flipping halfway through, until golden and crisp.
