Limppu is a traditional Finnish rye bread steeped in history. Originally baked in village ovens and communal bakehouses, Limppu was a staple in Finnish homes, celebrated for its rich flavors and hearty texture. Ingredients
- rye flour – 500 g / 4 cups
- all-purpose flour – 250 g / 2 cups
- water – 600 ml / 2 1/2 cups
- molasses – 50 g / 1/4 cup
- dry active yeast – 10 g / 2 teaspoons
- salt – 15 g / 1 tablespoon
- caraway seeds – 10 g / 1 tablespoon
Instructions
- In a large bowl, combine the rye flour, all-purpose flour, and caraway seeds.
- In a separate bowl, dissolve the yeast in warm water with molasses and let it sit until frothy, about 5 minutes.
- Combine the wet ingredients with the dry mixture, adding salt, and knead the dough until smooth and elastic, approximately 10 minutes.
- Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place until doubled, about 1-2 hours.
- Preheat your oven to 200°C (390°F).
- Punch down the dough and form it into a round loaf. Place it on a baking sheet lined with parchment paper.
- Cover and let rise again until nearly doubled, about 45 minutes.
- Bake in the preheated oven for 30-35 minutes or until the crust is deep brown and the loaf sounds hollow when tapped.
- Let cool on a wire rack before slicing.
