Limbondo is a traditional, rich, and aromatic sauce from the heart of the Democratic Republic of the Congo. This sauce is a staple in Congolese cuisine, renowned for its deep, earthy flavors and silky texture, typically enjoyed with fufu or rice. Made primarily from peanuts, Limbondo is accented with the warmth of ginger and the zing of chili, reflecting the diverse culinary heritage of the region. Ingredients

  • peanut butter – 1 cup / 240 g
  • water – 2 cups / 480 ml
  • onion – 1 large / 150 g, finely chopped
  • garlic – 4 cloves, minced
  • ginger – 1 tbsp / 15 g, grated
  • red chili pepper – 1, chopped
  • vegetable oil – 2 tbsp / 30 ml
  • salt – to taste
  • black pepper – 1/2 tsp / 2 g
  • lime juice – 1 tbsp / 15 ml

Instructions

  1. In a large saucepan, heat the vegetable oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Stir in the ginger and chopped chili pepper, cooking for another 2 minutes until fragrant.
  3. Reduce the heat to low and add the peanut butter to the pan. Gradually pour in the water, stirring constantly until the mixture is smooth.
  4. Bring the sauce to a simmer, stirring frequently to prevent sticking, and let it cook for 15-20 minutes until thickened to your liking.
  5. Season with salt and black pepper. Stir in lime juice just before removing from heat for a fresh zing.
  6. Serve warm with cooked rice or fufu.
