Ingredients
- beef tongue – 1 whole, approx. 1.5 kg / 3.3 lbs
- onion – 2 medium, chopped
- carrot – 2 medium, sliced
- garlic – 4 cloves, minced
- bay leaf – 1 large
- black peppercorns – 1 tsp
- green olives – 200 g / 1 cup, pitted
- tomato paste – 100 g / 1/2 cup
- white wine – 250 ml / 1 cup
- chicken broth – 1 liter / 4 cups
- olive oil – 2 tbsp
- salt – to taste
- fresh parsley – for garnish
Instructions
- Rinse the beef tongue thoroughly under cold water.
- In a large pot, combine the tongue, half the chopped onions, carrots, garlic, bay leaf, and peppercorns. Cover with chicken broth.
- Bring to a boil, then reduce heat to low, cover, and simmer for 2.5 hours or until the tongue is tender.
- Remove the tongue from the liquid, let it cool slightly, then peel off the skin and slice into 1 cm thick slices.
- In another pot, heat olive oil over medium heat. Add the remaining onions and sauté until translucent.
- Stir in the tomato paste and cook for 1 minute.
- Add the white wine, stirring to deglaze the pan, then add the sliced tongue, green olives, and enough strained broth to cover.
- Simmer for 30 minutes, allowing the flavors to meld together.
- Adjust seasoning with salt to taste.
- Garnish with fresh parsley before serving.
