Ingredients
- fresh lilikoi (passion fruit) juice – 1 cup / 240 ml
- granulated sugar – 1 cup / 200 g
- unsalted butter – 1/2 cup / 113 g
- large eggs – 4
- salt – 1/4 teaspoon
Instructions
- In a medium saucepan, combine fresh lilikoi juice and granulated sugar over medium heat, stirring until the sugar dissolves completely.
- Reduce the heat to low and add the unsalted butter, stirring until melted and well combined.
- In a separate bowl, whisk together the eggs and salt until nicely blended.
- Slowly add a few tablespoons of the warm lilikoi mixture into the eggs to temper them, whisking continuously to avoid curdling.
- Gradually add the egg mixture back into the saucepan, stirring constantly.
- Continue to cook the sauce over low heat, stirring constantly until it thickens and coats the back of a spoon, about 10 minutes.
