Ingredients
- whole fish (tilapia or catfish) – 2 lbs / 900 g
- banana leaves – 4 large leaves
- tomatoes, chopped – 2 cups / 400 g
- onion, chopped – 1 large / 200 g
- bell pepper, chopped – 1 large / 150 g
- garlic cloves, minced – 4 cloves
- fresh ginger, grated – 1 tbsp / 15 g
- palm oil – 1/4 cup / 60 ml
- salt – 2 tsp
- black pepper – 1 tsp
- cayenne pepper – 1/2 tsp
Instructions
- Preheat your oven to 375°F (190°C).
- Clean the fish thoroughly and pat dry. Score the fish to allow even cooking and better flavor absorption.
- In a bowl, mix the chopped tomatoes, onion, bell pepper, garlic, ginger, salt, black pepper, and cayenne pepper.
- Rub the fish with palm oil, then generously spread the tomato and spice mixture over the fish, ensuring it is well coated.
- Wrap each fish in banana leaves securely and place in an oven-safe dish.
- Bake in the preheated oven for 45-60 minutes, or until the fish is cooked through and fluffy.
- Serve the fish hot, straight from the banana leaves, for a traditional presentation.
