Ingredients

  • chicken thighs – 1 lb / 450 g
  • peanut butter – 1 cup / 240 ml
  • chicken stock – 4 cups / 960 ml
  • onion, chopped – 1 medium
  • tomatoes, diced – 2 medium
  • red bell pepper, chopped – 1 medium
  • garlic cloves, minced – 3 cloves
  • ginger, grated – 1 tbsp / 15 g
  • cayenne pepper – 1 tsp / 5 g
  • salt – to taste
  • black pepper – to taste
  • vegetable oil – 2 tbsp / 30 ml
  • scallions, sliced – for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
  2. Add garlic, ginger, and cayenne pepper; sauté until aromatic.
  3. Add chicken thighs and brown on all sides.
  4. Stir in tomatoes and red bell pepper, and cook until softened.
  5. Add peanut butter and chicken stock, stirring to combine.
  6. Bring to a boil, then lower the heat and simmer for 25-30 minutes until the chicken is cooked through.
  7. Season with salt and black pepper to taste.
  8. Garnish with sliced scallions and serve hot.
