Ingredients
- chicken thighs – 1 lb / 450 g
- peanut butter – 1 cup / 240 ml
- chicken stock – 4 cups / 960 ml
- onion, chopped – 1 medium
- tomatoes, diced – 2 medium
- red bell pepper, chopped – 1 medium
- garlic cloves, minced – 3 cloves
- ginger, grated – 1 tbsp / 15 g
- cayenne pepper – 1 tsp / 5 g
- salt – to taste
- black pepper – to taste
- vegetable oil – 2 tbsp / 30 ml
- scallions, sliced – for garnish
Instructions
- Heat oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
- Add garlic, ginger, and cayenne pepper; sauté until aromatic.
- Add chicken thighs and brown on all sides.
- Stir in tomatoes and red bell pepper, and cook until softened.
