  • garlic cloves, minced – 3
  • red wine – 2 cups / 480 ml
  • red wine vinegar – 1/4 cup / 60 ml
  • juniper berries, crushed – 1 tbsp / 5 g
  • bay leaves – 2
  • rosemary sprig – 1
  • olive oil – 1/4 cup / 60 ml
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Marinate the rabbit pieces overnight in a mixture of red wine, red wine vinegar, juniper berries, bay leaves, and rosemary.
  2. Remove the rabbit pieces, strain the marinade, and set aside the liquid.
  3. Heat olive oil in a large pot over medium heat. Sauté the onion, celery, and carrots until tender.
  4. Add the garlic and cook for an additional minute.
  5. Add the rabbit pieces to the pot and brown evenly on all sides.
  6. Pour the reserved marinade into the pot, bringing to a simmer.
  7. Season with salt and pepper. Cover and simmer gently for about 1.5 to 2 hours, or until the rabbit is tender.
  8. Serve hot, accompanied by polenta, mashed potatoes, or crusty bread.
