Laplap is a traditional dish from Vanuatu, a South Pacific Ocean nation made up of roughly 80 islands. Often considered the country’s national dish, Laplap embodies the rich, tropical flavors and the indigenous culinary techniques of its people. The dish is primarily made from grated root vegetables such as taro, yam, or banana, mixed with coconut milk, and wrapped in banana leaves before being baked traditionally in an underground oven. Meat varieties commonly accompany this staple, ranging from chicken and fish to pork and beef, making it a hearty and flavorful staple across Vanuatu.

Ingredients

  • taro root – 2 lbs / 900 g
  • ripe bananas – 2 whole
  • coconut milk – 2 cups / 480 ml
  • chicken breast pieces – 1 lb / 450 g
  • salt – 2 tsp / 10 g
  • banana leaves – enough to wrap

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and grate the taro root and bananas.
  3. In a large bowl, mix grated taro, bananas, coconut milk, and salt until well-combined.
  4. Spread the mixture evenly onto a clean banana leaf.
  5. Place chicken pieces on top of the mixture.
  6. Wrap tightly with banana leaves, ensuring a secure package.
  7. Place in a baking dish and cover with foil.
  8. Bake for 1 hour or until well-cooked.
  9. Remove from oven and let cool slightly before serving.
