Laping is an invigorating dish originating from the Sichuan region of China. Celebrated for its delightful contrast of silky smooth noodles and fiery spice, this dish is a testament to the play of textures and flavors that Chinese cuisine excels at. Ingredients

  • Mung bean starch – 1 cup / 120 g
  • Water – 3 cups / 720 ml
  • Soy sauce – 2 tablespoons / 30 ml
  • Vinegar – 2 tablespoons / 30 ml
  • Chili oil – 2 tablespoons / 30 ml
  • Garlic – 4 cloves, minced
  • Salt – 1 teaspoon / 5 g
  • Sugar – 1 teaspoon / 4 g
  • Sesame seeds – 1 tablespoon / 9 g
  • Coriander leaves – Handful, chopped

Instructions

  1. Mix mung bean starch with 1 cup of water until smooth.
  2. Bring the remaining water to a boil in a large pot.
  3. Slowly pour the starch mixture into the boiling water, stirring continuously until it thickens and becomes translucent.
  4. Pour the thick mixture into a flat tray and let it cool until it sets firm, then cut into strips.
  5. In a bowl, mix soy sauce, vinegar, chili oil, and minced garlic.
  6. Add salt and sugar to the sauce mixture, stirring well.
  7. Toss the noodle strips in the sauce until evenly coated.
  8. Sprinkle with sesame seeds and chopped coriander before serving.

Substitutions

  • Mung bean starch -> Cornstarch
  • Chili oil -> Sesame oil with chili flakes
  • Vinegar -> Rice vinegar
