Ingredients

  • rabbit – 1, cut into pieces
  • unsalted butter – 3 tbsp / 42 g
  • yellow onions – 2, thinly sliced
  • carrots – 2, chopped
  • all-purpose flour – 2 tbsp / 16 g
  • Belgian beer – 2 cups / 480 ml
  • chicken broth – 1 cup / 240 ml
  • dried thyme – 1 tsp
  • bay leaf – 1
  • salt – to taste
  • black pepper – to taste
  • parsley – for garnish

Instructions

  1. Melt butter in a large pot over medium heat. Add rabbit pieces and brown on all sides.
  2. Remove rabbit and set aside. In the same pot, add onions and carrots, cooking until the onions are translucent.
  3. Sprinkle flour over the vegetables and stir to coat.
  4. Slowly add beer and chicken broth, stirring constantly.
  5. Return rabbit to the pot and add thyme, bay leaf, salt, and pepper.
  6. Bring to a simmer, cover, and let cook for 1.5 hours, or until rabbit is tender.
  7. Remove bay leaf and adjust seasoning as needed.
  8. Serve hot, garnished with parsley.
