Lancashire Hotpot is a beloved traditional dish hailing from the North of England, specifically the county of Lancashire. Ingredients
- lamb shoulder, diced – 2 lbs / 900 g
- large onions, thinly sliced – 2 / 300 g
- carrots, sliced – 3 / 300 g
- waxy potatoes, peeled and thinly sliced – 4 / 500 g
- butter – 2 tbsp / 28 g
- thyme, fresh – 1 tsp / 1 g
- lamb stock – 2 cups / 480 ml
- salt and pepper – to taste
Instructions
- Preheat your oven to 325°F (160°C).
- In a large ovenproof casserole dish, melt the butter over medium heat and brown the lamb shoulder, seasoning with salt and pepper.
- Remove the lamb and set aside. In the same dish, cook the onions until soft and translucent.
- Layer the lamb, onions, and carrots in the dish, sprinkling the thyme between layers.
- Pour the lamb stock over the mixture, then arrange the potato slices on top in overlapping layers.
- Dot with additional butter, cover the dish with a lid or foil, and transfer to the oven.
- Bake for 1.5 hours, then remove the cover and bake for another 30 minutes, until the potatoes are golden brown.
- Serve hot, and enjoy!
