Lancashire Hotpot is a beloved traditional dish hailing from the North of England, specifically the county of Lancashire. Ingredients

  • lamb shoulder, diced – 2 lbs / 900 g
  • large onions, thinly sliced – 2 / 300 g
  • carrots, sliced – 3 / 300 g
  • waxy potatoes, peeled and thinly sliced – 4 / 500 g
  • butter – 2 tbsp / 28 g
  • thyme, fresh – 1 tsp / 1 g
  • lamb stock – 2 cups / 480 ml
  • salt and pepper – to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large ovenproof casserole dish, melt the butter over medium heat and brown the lamb shoulder, seasoning with salt and pepper.
  3. Remove the lamb and set aside. In the same dish, cook the onions until soft and translucent.
  4. Layer the lamb, onions, and carrots in the dish, sprinkling the thyme between layers.
  5. Pour the lamb stock over the mixture, then arrange the potato slices on top in overlapping layers.
  6. Dot with additional butter, cover the dish with a lid or foil, and transfer to the oven.
  7. Bake for 1.5 hours, then remove the cover and bake for another 30 minutes, until the potatoes are golden brown.
  8. Serve hot, and enjoy!
