Ingredients
- all-purpose flour – 2 1/4 cups / 270 g

- potatoes (peeled and sliced) – 1.5 lbs / 680 g
- onions (sliced) – 2 medium / 300 g
- salt – 1 teaspoon / 6 g
- black pepper – to taste
- nutmeg – 1/4 teaspoon / 1 g
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine flour and a pinch of salt. Rub in 1 cup (225 g) butter until the mixture resembles breadcrumbs.
- Add cold water gradually, mixing to form a dough. Wrap in plastic and chill for 30 minutes.
- Meanwhile, place the potatoes and onions in a pan with water to cover, add salt, and bring to a boil for 15 minutes until just tender.
- Drain potatoes and onions. Season with salt, pepper, and a pinch of nutmeg.
- Roll out 2/3 of the pastry dough and line a 9-inch pie dish.
- Layer the potatoes and onions in the pastry, topping with dollops of remaining butter.
- Roll out the rest of the dough and cover the pie, crimping the edges to seal. Make a small slit in the center.
- Bake for 30-35 minutes until the pastry is golden brown. Allow to cool slightly before serving.
