Ingredients

  • fresh mackerel – 500 g / 1 lb filleted
  • apple cider vinegar – 1 cup / 240 ml
  • garlic – 6 cloves, minced
  • black pepper – 1 tsp / 5 g ground
  • salt – 1 tbsp / 15 g
  • sugar – 1 tbsp / 15 g
  • bay leaves – 2 leaves
  • vegetable oil – for frying

Instructions

  1. In a large bowl, combine apple cider vinegar, minced garlic, ground black pepper, salt, sugar, and bay leaves. Stir until sugar and salt are dissolved.
  2. Add the mackerel fillets to the marinade, ensuring they are fully submerged. Cover and refrigerate for 1 to 2 hours.
  3. Drain the marinade and pat the mackerel fillets dry with paper towels.
  4. Heat vegetable oil in a pan over medium heat. Fry the mackerel on both sides until golden brown and crispy.
  5. Serve hot with garlic rice and vinegar dipping sauce.
