Ingredients

  • beef chuck – 500 g / 1.1 lbs
  • onion – 1 medium, chopped
  • carrot – 1 large, sliced
  • bell pepper – 1 medium, chopped
  • tomato paste – 2 tablespoons
  • garlic – 3 cloves, minced
  • vegetable oil – 3 tablespoons
  • potato – 2 medium, cubed
  • cabbage – 150 g / 2 cups, shredded
  • beef broth – 1.5 liters / 6 cups
  • soy sauce – 2 tablespoons
  • lagman noodles or thick udon – 300 g / 10.5 oz
  • salt – to taste
  • black pepper – to taste
  • cumin – 1 teaspoon
  • cilantro – for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add the beef and cook until browned.
  2. Add onion, carrot, and bell pepper. Sauté until vegetables are soft.
  3. Stir in garlic, tomato paste, and cumin. Cook for 2 more minutes.
  4. Add potatoes, cabbage, beef broth, and soy sauce. Bring to a boil, then reduce heat to low. Simmer for 30 minutes.
  5. Cook the noodles according to package instructions.
  6. Add cooked noodles to the soup. Season with salt and black pepper to taste.
  7. Garnish with chopped cilantro before serving.
